“Egg Spätzle”
Today we present you a lovely South Tyrolean dish
Ingredients:
200 ml mineral water | 300 g whole egg | 20 ml seed oil | 1 x salt | 1 msp nutmeg | 550 g wheat flour
Other ingredients:
60 g butter for tossing
Preparation
1. mix water with eggs, oil, salt and nutmeg.
2. stir in the wheat flour vigorously with a wooden spoon and beat. The result is a
smooth, viscous dough.
1. 3 Cover the dough and leave to rest for about 15 minutes.
3. using a spatzel slicer, slice the dough into boiling salted water and cook for 1 minute
after boiling.
4. remove the spatzels, rinse in cold water, strain, lightly oil and set aside.
5. to serve, heat the spatzles in boiling salted water, drain well and toss in hot butter.
